Various food and pharmaceuticals are produced by using biotechnology. Our laboratory is aiming at contributing to developments of food and pharmaceuticals with higher quality and more safety based on the understanding of physical and chemical properties, structures and functions of biological solutions composed of proteins, nucleic acids and polysaccharides.

In order to achieve these purposes, besides well developed and reliable biophysical methods such as analytical ultracentrifugation, viscometry, and calorimetry, states-of-art methods like native mass spectrometry, hydrogen/deuterium mass spectrometry and flow imaging are employed for comprehensive understandings.

Basic sciences and engineering of yeast which is indispensable for industries including food production is also the scope of our laboratory.
